As long as you have good intentions and know what the laws are and
obey them, there should be no insurmountable issues.
Age 20 is in the in-between age range, where they are considered an
adult in some respects, but are not allowed to drink or gamble in
Las Vegas.
From a standpoint of Diva Las Vegas, yes, your SO will be welcome
to participate with you with a few caveats.
Your SO will not be able to buy or consume alcohol, period. Your
SO will not be able to play any table or machine game, or even
accompany you or the group within a casino area. This even
precludes such things as sitting at a casino bar and drinking
a soda.
The only things that your SO will not be able to do with the group
will be such things as the Alternative Bar Crawl, Gaming Night,
Night Of The Soiled Doves (that may be ok for 18? Aiko?), and maybe
a couple others which may be held in 21-only facilities. There are
alternatives on the schedule for most of those I've listed above.
It's really the venues that will be enforcing it, not us.
